I propose a delicious recipe for a tuna, corn, and vegetable tart, perfect for a light lunch or a savory dinner. We start by preparing the ingredients. We carefully peel the onion and carrot, then wash them under a stream of cold water to remove any impurities. We slice the onion into thin rings and the carrot into fine rounds, so they cook evenly and retain their crunchy texture.

For the tomato, we peel it with a sharp knife or quickly dip it in hot water and then in cold water to facilitate peeling. We chop it finely, taking care to remove the seeds to avoid excess moisture in the filling.

In a large frying pan, we add two tablespoons of olive oil and heat it over medium heat. We add the onion and carrot to soften, stirring occasionally to prevent burning. After a few minutes, when the onion becomes translucent, we add the corn and chopped tomato, continuing to stir. Now is the time to add the tuna, which we have flaked by hand to preserve its texture. We sprinkle with the juice of half a lemon, which will provide a fresh taste and balance the flavors. We season with salt and pepper to taste and let the mixture cool slightly.

While the filling cools, we take the puff pastry out of the fridge. We roll it out on a prepared baking tray, ensuring it lays evenly. We use a fork to poke the pastry in several places, which will allow steam to escape during baking, thus preventing bubbles from forming.

Once the filling has cooled, we mix it with the beaten eggs, making sure everything is well combined. We carefully pour the filling over the puff pastry, and if we have leftover pastry, we can decorate it in the form of strips or shapes to make the tart more attractive.

We brush the surface with a little olive oil to achieve a golden and appetizing crust. We preheat the oven to 190 degrees Celsius and place the tart inside, allowing it to bake for about 30-35 minutes or until it becomes golden and crispy.

After being removed from the oven, we let the tart cool slightly before slicing it. We serve it alongside a fresh green salad, which will perfectly complement the rich flavors of the filling. Enjoy your meal!
