This eclair cake recipe is inspired by rich culinary traditions and is perfect for any special occasion or simply to treat your family. Whether you are a beginner cook or an experienced one, I will guide you through the steps to achieve a spectacular eclair cake.

A Brief History of the Eclair Cake

The eclair cake has its roots in European pastry tradition, cherished for its light texture and creamy filling. Over time, various variations have been created, each with a unique style and flavor. It is a dessert that delights with the contrast between the crunchy texture of the dough and the smoothness of the cream.

Ingredients

Dough
- 75 ml oil
- A pinch of salt
- 150 ml water
- 100 g flour
- 3 eggs

Cream
- 800 ml milk
- 8 tablespoons sugar
- Vanilla essence (preferably natural)
- 8 tablespoons cornstarch
- 400 ml liquid cream
- 2 teaspoons instant coffee

Glaze
- 100 g chocolate (preferably dark for a nice contrast)
- 100 ml liquid cream

Step by Step: Preparing the Eclair Cake

1. Preparing the Dough
1. In a saucepan, combine water with oil and a pinch of salt. Place the saucepan over medium heat and wait for it to boil.
2. When the mixture boils, add all the flour at once, stirring constantly with a whisk to avoid lumps. Continue stirring for 2-3 minutes until the dough pulls away from the sides of the pan.
3. Remove the dough from heat and let it cool for 5-10 minutes.
4. Once cooled, add the eggs one at a time, mixing well after each addition. The dough should be smooth and homogeneous.

2. Baking the Dough
1. Preheat the oven to 200°C (high heat).
2. Use a 28 cm diameter baking tray lined with parchment paper. Form mounds of dough (about 3 cm in diameter) on the tray, leaving spaces between them.
3. Bake the dough for 10 minutes at high heat, then reduce the temperature to 180°C and continue baking for another 10 minutes until the eclairs are golden and crispy. Check if they are well-baked by gently pressing an eclair - it should be firm.

3. Preparing the Cream
1. In a saucepan, bring 600 ml of milk to a boil along with the sugar and vanilla essence.
2. In a separate bowl, dissolve the cornstarch in the remaining milk (200 ml).
3. When the milk in the saucepan boils, add the cornstarch mixture, stirring continuously until the cream thickens. Turn off the heat and let the cream cool slightly.
4. Separate a quarter of the hot cream and mix it with the instant coffee, then let it cool completely.
5. Whip the liquid cream and fold a quarter of it into the coffee cream and the rest into the vanilla cream to achieve a fluffy texture.

4. Preparing the Glaze
1. Break the chocolate into small pieces and place it in a heat-resistant bowl.
2. Heat the liquid cream over steam until just before boiling, then pour it over the chocolate. Mix well until smooth.

5. Assembling the Cake
1. In the tray where you baked the eclairs, place a layer of eclair bases.
2. Spread the vanilla cream evenly on top, then cut the remaining eclairs in half and fill them with the coffee cream.
3. Place the filled eclair halves over the vanilla cream, then pour the chocolate glaze on top.
4. Refrigerate the cake for at least 2 hours to set well.

Practical Tips
- Make sure the dough is well mixed and lump-free before adding the eggs.
- Try to use room temperature eggs for a better texture.
- The glaze can be adapted with different flavors, such as orange or mint essence, for a touch of originality.
- The cream recipe can be simplified; omitting the coffee cream will result in a delicious vanilla cream!

Frequently Asked Questions
- Can I use another type of milk? Yes, you can use almond or soy milk for a lactose-free version.
- How can I store the cake? It can be kept in the refrigerator for 3-4 days in an airtight container.
- Can it be frozen? It is recommended to avoid freezing the assembled cake, but you can freeze unfilled eclairs.

Delicious Pairings
This eclair cake pairs perfectly with a berry fruit tea or a creamy cappuccino. You can also serve it with vanilla ice cream for an unforgettable experience.

Nutritional Benefits
The flour used provides essential carbohydrates, while the eggs bring important proteins and vitamins. However, it is best to consume this cake in moderation, considering the sugar and fat content from the cream and chocolate.

Personal Note
This eclair cake recipe is one of my favorites, as it combines childhood memories with refined cooking technique. I encourage you to experiment and add your favorite ingredients – perhaps a splash of rum in the cream or some toasted nuts on top for added texture.

Enjoy this wonderful recipe and don’t forget to share the final result with friends and family. Bon appétit!
