Caramel Chicken

 Ingredients: 600g of chicken breast, 2 carrots, 1 large zucchini, bamboo, 1 leek, 200g of sugar, 2 tablespoons of rice vinegar, 80-100ml of soy sauce, 2 heaping teaspoons of cornstarch (corn, rice) dissolved in water, 1 tablespoon of flour, salt, pepper, ginger, 4 tablespoons of oil (I used walnut oil). We use a wok or a deep frying pan.

Carrots are carefully peeled and chopped finely to cook evenly, and the zucchini is also peeled and cut into small cubes. The leek, with its delicate aroma, is washed well under running water and then sliced into thin rounds. In a large pan, we heat two tablespoons of oil, preferably sunflower or olive oil, and begin adding the vegetables, starting with the carrots, as they have the longest cooking time. We let the carrots sauté for about four minutes, then add the zucchini, and finally the leek rounds and bamboo slices. We mix everything well and let the vegetables cool in a bowl, removing them from the heat.

Next, we take care of the chicken. It is cut into small cubes, about the size of a bite, and sprinkled with flour, which will help it remain juicy and full of flavor. In a separate pan, we heat the other two tablespoons of oil and fry the chicken until it becomes golden and well-cooked. Once the chicken is ready, we set it aside, season with salt and pepper to taste, and add a small amount of grated ginger, which will provide an exotic and spicy accent.

Now we prepare the sauce. We make a dry caramel from the 200 grams of sugar. When it turns a deep golden color, we carefully add the soy sauce and rice vinegar, stirring well to prevent lumps from forming. We let the sauce simmer for a few minutes to homogenize and achieve a velvety texture. We pour the sauce over the chicken and sautéed vegetables, mixing everything carefully.

In a bowl, we dissolve cornstarch in cold water, then pour the mixture into the pan, stirring continuously to prevent lumps. We let it cook for a maximum of ten minutes, until the sauce thickens and becomes glossy.

We serve this delicacy alongside fragrant, steaming rice, which will absorb the rich flavors of the sauce. Enjoy your meal! The dish will delight the senses and bring a touch of Asian flavor to your table!
