- 1 teaspoon sugar
- 1 cup cold butter, cut into pieces
- ¼ cup cold water

Ingredients for Filling:
- 3 eggs
- 1 ¾ cups cream
- ½ teaspoon salt (watch out for salty cheese)
- 1 teaspoon nutmeg (heaping)
- 1 teaspoon pepper (heaping)
- 1 cup grated cheese (telemea, mozzarella, cheddar, fattier feta)
- ½ onion, finely chopped
- 1 cup chopped ham
- 1 red bell pepper or pimento (preferably pimento for texture)

Preparing the Crust:
1. Start by preheating the oven to 190°C (375°F). This will ensure even baking of the quiche.
2. Take a round tart pan with a diameter of about 23 cm (or a small rectangular pan if you don’t have one). Grease it well with butter and sprinkle a little flour to prevent sticking.
3. In a large bowl, combine the flour, salt, and sugar. Add the cold butter cut into small pieces and, using your fingertips, gently mix until you achieve a texture similar to breadcrumbs.

4. Pour the filling over the pre-baked crust and return it to the oven. Bake for another 15-20 minutes, or until the quiche is golden and no longer jiggles in the center.

Serving:
