Ingredients:

- 2 large zucchinis
- 400 g minced meat (beef, chicken, or a vegetarian option - mushrooms or lentils)
- 1 medium onion
- 2 cloves of garlic
- 400 g chopped tomatoes (canned or fresh)
- 250 g ricotta cheese
- 150 g grated mozzarella cheese
- 50 g grated parmesan cheese
- 1 egg
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh oregano or basil

Preparation:

1. Start by preparing the zucchinis. Wash them well, then slice them lengthwise into thin strips, about 5 mm thick. This will allow the zucchinis to cook evenly and absorb the flavors from the sauce.

2. Heat a grill pan over medium heat. Add the zucchini slices and grill them on both sides for 2-3 minutes until they become slightly browned. As you grill them, place them in a container and sprinkle a little salt on each layer to draw out excess water.

3. In the same pan, add the olive oil and sauté the finely chopped onion until it becomes translucent. Then add the crushed garlic and minced meat. Cook everything until the meat is well browned. If you choose the vegetarian option, add the mushrooms or lentils and cook until soft.

4. Once the meat is cooked, add the chopped tomatoes, salt, pepper, and oregano (or basil) to taste. Let the sauce simmer on low heat for 10-15 minutes, stirring occasionally.

5. In a separate bowl, mix the ricotta cheese with the egg and a pinch of salt. This mixture will add creaminess to your lasagna.

6. Now it's time to assemble the lasagna. Preheat the oven to 180°C. In a baking dish, place a layer of grilled zucchini, then a layer of meat sauce, followed by a layer of the ricotta cheese mixture. 7. Sprinkle grated mozzarella and parmesan cheese on top to achieve a golden and delicious crust.

8. Cover the dish with aluminum foil and bake for 20 minutes. After this time, remove the foil and let the lasagna bake for another 10 minutes until the cheese is melted and slightly browned.

9. Let the lasagna rest for 5-10 minutes before slicing. This will help set the layers and make slicing easier.
