Number of servings: 72 croissants
Yogurt croissants are a traditional snack, full of flavor and fragrance, reminiscent of moments spent with family around the table, whether during holidays or relaxing times. These delicious little treats are perfect to be served with a cup of tea or coffee, but they can also be a perfect dessert for special occasions, such as Christmas or New Year.
Ingredients:
- 250 g flour
- 125 g margarine (melted and cooled)
- 100 g yogurt
- 25 g fresh yeast
- 25 g sugar
- A pinch of salt
- Grated zest of one lemon (optional)
- Powdered sugar for decoration
- Filling: Turkish delight, jam, or other preferred fillings (e.g., chocolate or ground nuts)
Step 1: Preparing the dough
In a small bowl, place the yeast and sugar. Rub them together with a fork until the yeast becomes liquefied. This step is essential as it activates the yeast and allows it to work.
Add the melted (but cooled) margarine, a pinch of salt, yogurt, and grated lemon zest for extra flavor. Mix the ingredients well until they are homogeneous.
Finally, gradually add the flour, mixing constantly. When the dough becomes harder to mix with the spoon, start kneading it with your hands. Knead for 6-7 minutes until you obtain an elastic and homogeneous dough.
Once finished, cover the dough with a clean towel and let it rise in a warm place for about 30 minutes. This resting time will allow the yeast to act, and the dough to become fluffy.
Step 2: Shaping the croissants
After the dough has risen, transfer it to a floured surface. Shape it into a thicker roll and cut it into 6 equal pieces. Each piece is shaped into a ball and covered with a towel to prevent drying out.
Working with one piece of dough at a time, roll it out with a rolling pin until you obtain a round shape the size of a large plate. Use a pastry cutter or a knife dusted with flour to cut the circle in half, then into quarters, and each quarter into three triangles. This way, you will get 12 equal triangles from each piece of dough.
At the base of each triangle, place a teaspoon of filling (Turkish delight, jam, or anything else you like) and carefully roll it up, starting from the base of the triangle. Place the rolled croissants on an ungreased baking tray, leaving about 1 cm space between them. Cover them and let them rise for another 15 minutes.
Step 3: Baking
Preheat the oven to medium temperature (about 180°C). Bake the croissants for 15-20 minutes until they turn slightly golden. They won't rise much, but they will be tender and delicious.
After removing them from the oven, let them cool slightly, then roll them in powdered sugar while they are still warm. This step will not only add an attractive appearance but will also enhance the sweetness.
Serving and variations
Yogurt croissants are delicious served warm, but they can be kept in airtight containers for consumption in the following days. They can be served alongside a cup of aromatic tea or cappuccino, and for a touch of elegance, you can add some fresh fruits on the plate.
The variations are limitless! You can experiment with different fillings, such as melted chocolate, cream cheese, or even dried fruits. Also, if you want to make them less sweet, reduce the amount of sugar in the dough.
Nutritional benefits
These croissants are a good source of carbohydrates and healthy fats due to the margarine and yogurt. Yogurt also contributes with proteins and probiotics, beneficial for digestion. Whole flour can be used to add more fiber and nutrients, making the recipe even healthier.
