Three Types of Sarmale
Do you dream of a table full of flavors and traditions? I invite you to discover my recipe for sarmale, an unusual combination of Pastorel Teodoreanu's sarmale and those from Bucovina, with a personal touch that makes them truly special. I chose to create three delicious types: with pork, chicken, and beef. Without rice, as tradition recommends, but with a lot of passion and selected ingredients.
To begin, prepare the necessary ingredients. You will need large cabbage leaves, minced pork, chicken, and beef, onion, spices such as salt, pepper, thyme, and a bay leaf. Don’t forget the ham, which will add an extra flavor. Mix each type of meat with sautéed onion and spices, making sure to obtain a homogeneous and aromatic composition.
After you finish wrapping the sarmale, carefully arrange them in the pot, alternating between the three types, and place strips of ham in between. Then, prepare a mixture of 1/2 cabbage juice and 1/2 red wine, which you will pour over the sarmale. The red wine will add a unique taste and will flavor the dish. Cover everything with a large cabbage leaf and put the lid on the pot, letting them simmer on low heat until the leaves become soft and translucent, and the aroma fills the entire kitchen.
After checking that the sarmale are ready, it’s time to enrich them with pickled grapes and pickled eggs, which will bring a perfect balance between salty and sweet flavors. The sarmale with chicken will benefit from the company of these delicacies, while the one with beef will be envious without a touch of sweetness. Serve them with a bowl of rice, abandoning the tradition of polenta and bringing to the forefront a side dish that perfectly complements the dish.
