Cappelletti with Raw Ham

Don't forget the extra virgin olive oil, about 100 ml, which is essential to bind all the ingredients and create a creamy emulsion. Additionally, we will use 50 grams of grated parmesan to add an extra kick of flavor. Finally, don't forget salt and pepper to taste.

To prepare the pesto, we start by washing the arugula well under cold running water, then we drain it well. In a blender or food processor, we add the arugula, walnuts, parmesan, salt, and pepper. Meanwhile, we prepare the cappelletti. We boil water in a large pot and add salt. When the water starts to boil, we add the cappelletti and let them cook for just 3 minutes, following the instructions on the package. It is important not to overcook them to maintain their firm texture.

Once the cappelletti are ready, we drain them well and transfer them to a large bowl. We add the fresh cheese, which will bring a creamy note and delicate flavor, and the previously prepared arugula pesto. We gently mix to ensure that each cappelletti is well coated with the flavorful sauce.

For an extra treat, you can add some halved cherry tomatoes to bring a touch of freshness and color. Finally, sprinkle some grated parmesan and a few fresh arugula leaves on top for decoration.
