Total preparation time: 1 hour
Number of servings: 6-8

Ingredients
- 1 onion
- 2 medium carrots
- 1 parsnip
- 1/2 celery root
- 2 zucchinis
- 2 large new potatoes
- 1 cup rice
- 1 cup peas
- 1 cup green beans
- 500 ml borscht
- 300 g yogurt
- 2-3 tablespoons olive oil (or another vegetable oil)
- Salt and pepper, to taste
- A bunch of fresh dill

Necessary utensils
- A large pot
- A sharp knife
- A large grater
- A wooden spoon
- A ladle
- A cutting board

Step by step

Step 1: Prepare the vegetables
Start by peeling and chopping the vegetables. The onion should be finely chopped, while the carrots, parsnip, and celery should be grated. This step is essential for creating a flavorful base for the soup, so take your time! First, chop the onion, then grate the other vegetables.

Step 2: Sauté the vegetables
In a large pot, add the 2-3 tablespoons of oil and heat over medium heat. Once the oil is hot, add the chopped onion and the grated vegetables (carrots, parsnip, and celery). Sauté for 5-7 minutes, stirring frequently, until the onion becomes translucent. This is when the flavors meld together and start to fill the kitchen with an irresistible aroma.

Step 3: Add the rice
After the vegetables have softened a bit, add the washed and drained rice. Mix well so that the rice combines with the vegetables. It will absorb the flavors and give the soup a nice texture.

Step 4: Boil the soup
Add about 2 liters of water to the pot and bring to a boil. Once the water starts boiling, reduce the heat to low and let the soup simmer for 15 minutes. This time will allow the rice to cook well and release its starch, giving the soup a creamy texture.

Step 5: Add the remaining vegetables
After the rice has cooked, add the peeled and diced potatoes, sliced zucchinis, peas, and green beans. You can use frozen or fresh green beans, depending on the season. Stir everything together and let the soup simmer on low heat for another 30 minutes. If necessary, add more water to achieve the desired consistency.

Step 6: Finish the soup
After 30 minutes, add the borscht and yogurt, stirring well. Allow the soup to boil for a few more moments, then adjust the taste with salt and pepper. This is the perfect time to tweak the flavors, so feel free to taste the soup.

Step 7: Add the dill
Once the soup is ready, turn off the heat and add the finely chopped dill. Fresh dill adds a note of freshness and a distinct flavor that will make the soup truly special.

Serving
Serve the vegetable soup warm in deep bowls. You can add a spoonful of yogurt on top for extra creaminess and a sprinkle of fresh dill for garnish. This soup goes wonderfully with a slice of toasted whole-grain bread or crunchy croutons. You can accompany the meal with a glass of mineral water or a natural tomato juice for a complete culinary experience.

A serving of soup provides a significant amount of fiber that aids digestion, as well as antioxidants that support the immune system.
