Greek White Cabbage Salad

Ingredients: -white cabbage (about 400 g) -400 ml low-fat sour cream or 200 ml sour cream + 200 ml thick full-fat yogurt -2 large garlic cloves, crushed -1 bunch of fresh dill, finely chopped -salt -white pepper, freshly ground

To prepare a delicious and refreshing cabbage salad, we start by finely chopping the cabbage. Using a sharp knife, we cut the cabbage into thin strips, which will allow for even marination and a pleasant texture. Once we have the desired strips, we sprinkle a little salt over the cabbage. The salt will not only help enhance the flavor but will also help remove excess water from the cabbage, making it crisper. We mix the cabbage well with the salt, ensuring that each strip is coated, then let the cabbage sit for 10 minutes. This step is essential as it allows the salt to penetrate the cabbage's structure and enhance its flavor.

After the 10 minutes have passed, we take the cabbage and squeeze it well to remove the accumulated juice. It is important to get the cabbage as dry as possible to avoid diluting the dressing we will prepare. In a separate bowl, we start preparing the dressing. We mix the sour cream (or a combination of sour cream and yogurt for a lighter taste) with crushed garlic, finely chopped fresh dill, salt, and pepper. The garlic will add an intense note, while the dill will provide a fresh and invigorating aroma. We homogenize all the ingredients well until we achieve a creamy and uniform composition.

Once the dressing is ready, we carefully incorporate the chopped and squeezed cabbage into the sour cream mixture, ensuring that each cabbage strip is well coated. This step is crucial as we want every bite to be full of flavor. Once we have mixed everything, we cover the bowl with plastic wrap or a lid and refrigerate it for at least an hour. This resting time allows the flavors to blend perfectly, resulting in a savory and comforting cabbage salad, perfect as a side dish or appetizer.

We serve the salad cold, and it can be garnished with a few fresh dill leaves for a pleasant appearance. This cabbage salad is not only tasty but also healthy, being rich in vitamins and nutrients. Enjoy your meal!
