Mascarpone Tart
We start with preparing the base, an essential step in making this delicious dessert. The first thing we need to do is beat the egg whites until frothy. We gradually add the sugar, continuing to mix until the foam becomes firm and shiny. Finally, we add a pinch of salt, which will help stabilize the foam. In a separate bowl, we handle the yolks. We mix the yolks with a tablespoon of oil, vanilla sugar, and grated lemon zest, which will add a special aroma to our composition. It is important to ensure that all ingredients are well combined.
Once we have achieved a homogeneous mixture, we add the whipped egg whites. It is essential to gently fold in, using a spatula, from top to bottom, so as not to lose the air in the egg whites, which will make the base fluffy. Gradually, we start incorporating the sifted flour along with the chopped walnuts or ground almonds, thus providing a rich taste and pleasant texture.
Once we have obtained a uniform dough, we pour it into a round mold lined with baking paper and place it in the preheated oven at 180 degrees Celsius. We bake for about 30 minutes or until a toothpick inserted in the middle of the base comes out clean. After baking, we let the base cool completely on a rack.
In the meantime, we dedicate ourselves to preparing the cream. In a bowl, we mix a tub of mascarpone with four tablespoons of concentrated coffee and 30 grams of sugar, obtaining a smooth and fragrant cream. Now, we prepare to soak the base. We use a toothpick to poke the base in several places, thus facilitating the absorption of the syrup. With a spoon, we carefully pour coffee or hot chocolate over the surface of the base, depending on personal preferences, being careful not to soak it too much.
After soaking the base, we spread the mascarpone cream evenly over its surface. Now comes the creative part - decorating. Everyone can unleash their imagination; I chose to create a pattern that imitates waves. We melt the chocolate and, using a piping bag, lightly sketch the tart to give it an elegant look. The final step is to refrigerate the tart for 2-3 hours so that the cream sets and the flavors blend perfectly. Now, our dessert is ready to be enjoyed, a true delicacy for any special occasion!
