Hot peppers in vinegar

We start the process by choosing the right peppers. It is ideal to opt for fresh, meaty peppers, without spots or signs of damage. After carefully washing them under a stream of cold water, we let them drain well, ensuring that no water droplets remain that could affect the preservation process.
Peppers can be left whole for a rustic look or cut into strips, depending on personal preferences or how we intend to use them later. Once we have decided how we will prepare them, we need to take care of the preservation mixture. In a pot, we combine water, vinegar, salt, and sugar, being careful to respect the proportions, so as to achieve a perfect balance between acidity and sweetness. We bring the mixture to a boil, stirring gently to ensure that the salt and sugar dissolve completely.
When the mixture begins to boil, we feel the intense aroma spreading throughout the kitchen, heralding the delight to come. We carefully pour the hot liquid over the peppers, making sure that each piece is well covered. This is the moment when the peppers begin to absorb the flavors and become part of a delicious dish.
