Pizza with bell peppers and anchovies
In a generous bowl, start by thoroughly dissolving the yeast in warm water, making sure the water temperature is ideal to activate the yeast without killing it. Add the salt, a pinch of sugar to stimulate fermentation, and olive oil, which will add a pleasant flavor to the dough. Gently mix the ingredients to ensure the yeast dissolves completely. Gradually incorporate the flour, little by little, until the dough starts to reach the desired consistency. It is important not to add too much flour, so the dough does not become too hard; it should be soft but not stick to your hands. If you feel the dough starting to come off your fingers, it is a sign that you have added enough flour. Once you have obtained a uniform composition, cover the bowl with a thicker towel and leave it in a warm place, away from drafts, to rise. Let the dough rest for at least one hour, but ideally between 1 hour and 1 hour and a half. Meanwhile, prepare the ingredients for the toppings. Cut the pepper into thin strips and the mozzarella into cubes, ensuring that these ingredients are ready to use when the dough has risen. Once it has reached the desired size, divide it into two equal parts and roll each part into large pizza shapes, with a diameter of 28 cm. Use your hands to stretch the dough to achieve an even base. After rolling out the dough, add tomato sauce as desired, being careful not to overdo it to avoid making the dough too soggy. Sprinkle the mozzarella cubes, pepper strips, and anchovies, then add dried oregano and, if necessary, a pinch of salt. Place the pizza in the preheated oven, in the middle, and let it bake for 15 minutes at a moderate heat. The second pizza will need about 10 minutes, so keep an eye on them to avoid burning. If you have leftover dough, don't worry! You can use the rest to make doughnuts, whether you prefer them savory or sweet. Heat oil in a pan and form small balls from the dough, which you can fry on both sides until they become golden and crispy. After frying, place the doughnuts on a napkin to absorb excess oil. If you choose the sweet version, don't forget to sprinkle powdered sugar on top, turning them into a delicious dessert. This recipe will not only give you a delicious pizza but also an appreciation for your culinary skills!
