Sautéed Chicken Livers
Hello! Today I have prepared a delicious and quick recipe that brings back pleasant memories from childhood or visits to favorite restaurants. It is about chicken livers, a simple dish but full of flavor, perfect for a family meal or a more special dinner.
To start, we will prepare the necessary ingredients. We need a piece of quality butter, olive oil, a large onion, fresh chicken livers, dry white wine, tomato juice or fresh tomatoes, salt, pepper, and of course, fresh parsley to add a note of freshness. If you prefer a more intense flavor, you can also add crushed garlic or herbs such as thyme or rosemary.
In a deep pot, we start by melting the butter over medium heat. It is important to be careful, as the butter burns very quickly. Once the butter has completely melted, we add the olive oil. When the mixture becomes hot enough, we can add the finely chopped onion. The onion will take on a golden hue and a sweet taste, which will significantly contribute to the final aroma of the dish.
After the onion has lightly caramelized, it is time to add the livers. We cover the pot with a lid and let the livers steam for 15-20 minutes, stirring occasionally to ensure they do not stick to the bottom. It is important not to overcook them, as they need to remain tender and juicy. When the sauce starts to reduce, we add the white wine and let it cook on high heat for 5-6 minutes to allow the alcohol to evaporate.
After the wine has reduced, we add the tomato juice, adjust the taste with salt and pepper, and add the finely chopped parsley. We let it cook for just a few more minutes until the flavors blend perfectly. In the end, the livers should be slightly pink inside, a sign that they are ready to serve.
The dish pairs wonderfully with warm polenta, potato garnish, or rice, providing a pleasant contrast of textures. If you want to vary, you can replace the tomato juice with fresh tomatoes, peeled and seeded, or even with tomato paste for a more concentrated taste.
