To prepare a delicious new potato recipe with yogurt and saffron, start by carefully peeling the potatoes, ensuring that you remove all impurities. Then, in a large deep skillet, melt a generous amount of butter or oil over very high heat to achieve perfect browning. Add the peeled and dried potatoes, being careful not to overcrowd them, so they brown evenly. The strong heat will create a golden crust on the outside while keeping them juicy on the inside.

After a few minutes, when the potatoes have taken on a nice color, carefully pour the yogurt over them without covering them completely. It’s best to add yogurt up to halfway or even 3/4 of the height of the potatoes. Sprinkle salt to taste and cover the skillet with a lid. Reduce the heat to low and let them simmer slowly. It’s essential to periodically check the potatoes by lifting the lid and gently stirring to prevent sticking. There shouldn’t be too much liquid left, but they shouldn’t dry out completely, so if you notice that the yogurt has reduced too much, add a little more.

When the potatoes are well cooked and a fork easily goes into them, it’s time to add the saffron. Place a few strands of saffron in a small cup and pour a little milk or yogurt over them to activate their intense flavor. Mix well until the saffron is completely dissolved, then pour this mixture over the potatoes. Carefully mix everything so that the flavors blend perfectly, and let it cook for another 5-10 minutes to allow the flavors to develop.

Finally, chop the fresh mint and add it to the yogurt sauce, stirring gently. Immediately turn off the heat and let the potatoes cool slightly before serving. It’s important not to let them cool completely, as the remaining yogurt sauce in the skillet risks being absorbed by the potatoes or coagulating, affecting the final texture and appearance of the dish.
