- 4 large potatoes
- 4 eggs
- 200 g telemea cheese
- 2 tablespoons sour cream
- 100 g grated cheese
- Salt, to taste

Preparation:

1. Boiling the potatoes: Start by washing the potatoes well under cold running water to remove any impurities. Place them in a pot with water and a little salt, and let them boil for about 30 minutes. It is important that they are well cooked but not so much that they crumble.

2. Cooling and peeling: After 30 minutes, remove the potatoes from the water and let them cool slightly in cold water. Once they have cooled enough, peel them. This step is essential for achieving a fine texture.

3. Grating: Use a large grater to grate the potatoes. This is a trick that will help mix the ingredients better and give the pudding a uniform texture.

4. Mixing ingredients: In a large bowl, add the grated potatoes, grated telemea cheese (you can also use feta cheese for a stronger flavor), sour cream, and 3 eggs. Mix everything well until you obtain a homogeneous mixture. Make sure all ingredients are well integrated, and add salt to taste.
