Greek Food
To prepare a delicious and hearty dish, start by washing and draining the rice. Then place it in a pot with hot water and salt, stirring until the water begins to boil. Once it reaches a boil, reduce the heat and cover the pot. Let the rice simmer on low heat for 12 minutes. It is essential that after this time you remove the pot from the heat and let the rice sit, still covered, for another 12 minutes. The rice should be partially cooked to cooked, with a firm center, and after the 12 minutes of resting, it should not have any water left. If you are using long-grain rice, it is enough to add just 100 ml of water.
After the rice has cooled, fluff it with a fork and set it aside. In a separate bowl, prepare the filling by mixing the minced meat, which has been passed through the meat grinder 2-3 times, with the eggs, milk, sautéed onion, cooled rice, and your favorite spices. Make sure all the ingredients are well incorporated to achieve a homogeneous mixture. In another bowl, prepare the cheese mixture by crumbling it well and homogenizing it with whipped butter, crushed garlic, and parsley until you obtain a fine paste.
Once the filling is ready, divide the meat mixture into three equal parts and the cheese mixture into two. Grease a larger baking dish with butter and place an even layer of the meat mixture in the center, shaping it into a rectangular form. On top of this layer, add an even layer of cheese, followed by another layer of meat, then cheese again, and finish with a final layer of meat. Sprinkle a few pieces of butter here and there to ensure even browning.
Around the meat shape, place the peeled and sliced potatoes, seasoning them with salt, pepper, and dill for added flavor. Preheat the oven to 200 degrees Celsius and place the dish inside, allowing it to bake for about 30 minutes. After this time, remove the dish, turn the potatoes for even browning, and return it to the oven for another 30 minutes. During this time, the liquid formed in the dish will evaporate, and the potatoes will take on a golden and appetizing color.
Once the dish is ready, serve it warm, alongside the browned potatoes and a few slices of the delicious meat. This dish will surely be a hit at any meal, bringing a blend of flavors and textures that will delight the taste buds of those who savor it.
