Original Tiramisu Recipe
Tiramisu - the original recipe
There are moments in life when all you need is a delicious serving of tiramisu. This iconic dessert, with layers of smooth cream, coffee, and biscuits, is perfect for celebrating special occasions or simply indulging your taste buds. Although it is a dessert I rarely make, today I've decided to bring it back into the spotlight and share with you the original recipe, step by step.
Preparation time: 30 minutes
Chilling time: 4 hours
Total time: 4 hours and 30 minutes
Servings: 8
Ingredients:
- 400 g of biscuits (ladyfingers)
- 400 g of mascarpone cheese
- 4 egg yolks
- 4 tablespoons of sugar
- 3 packets of vanilla sugar
- 500 ml of heavy cream
- 2 packets of cream stabilizer
- 1 L of brewed coffee (preferably freshly made)
- 50 ml of piña colada liqueur (or another preferred liqueur)
Preparation steps:
1. Preparing the coffee: Start by brewing the coffee. Use quality coffee, as it will influence the final taste of the dessert. Once brewed, let it cool completely. It is essential that it is cold to avoid melting the mascarpone cream when combined.
2. Mascarpone cream: In a large bowl, add the egg yolks and sugar. Use an electric mixer to beat the mixture on medium speed until creamy and doubled in volume. This process will introduce air into the mixture, giving it a light texture.
3. Adding mascarpone: Once the egg and sugar mixture is ready, gradually add the mascarpone. Gently mix with a spatula or with the mixer on low speed until everything is homogenized, being careful not to incorporate too much air.
4. Whipping the cream: In another bowl, whip the heavy cream using a mixer. When the cream starts to thicken, add the two packets of cream stabilizer. Continue mixing until the cream is firm, but don't overdo it, as you may end up with butter.
5. Combining ingredients: Using a spatula, fold the whipped cream into the mascarpone mixture, gently mixing to maintain the airiness. It is important to do this with delicate movements to achieve a light and airy texture.
6. Preparing the biscuits: In a deep bowl, combine the cold coffee with the piña colada liqueur. This combination will give a subtle flavor and a unique taste to your dessert.
7. Assembling the tiramisu: Start by dipping each biscuit into the coffee and liqueur mixture, ensuring they soak well but not so much that they disintegrate. Place a layer of biscuits at the bottom of a dish.
8. Cream layer: After placing half of the biscuits, pour half of the mascarpone cream on top. Spread the cream evenly, ensuring it reaches the corners of the dish.
9. Repeating the process: Continue with another layer of soaked biscuits, followed by the remaining cream. It is important to ensure that all layers are uniform and well placed.
10. Finishing: Finally, dust a generous layer of cocoa over the tiramisu. This not only adds a touch of elegance but also provides a pleasant contrast to the sweetness of the cream.
11. Chilling: Cover the dish with plastic wrap and let the tiramisu chill in the refrigerator for at least 4 hours, ideally overnight. This resting time allows the flavors to develop and the texture to stabilize.
Serving suggestions: Tiramisu is served cold, cut into squares. You can add a dollop of whipped cream on top or a few coffee beans for decoration.
Tips and variations:
- You can experiment with different types of liqueur, such as Amaretto or Frangelico, to change the flavor profile of the tiramisu.
- Instead of piña colada, you can opt for a coffee liqueur for a more intense taste.
- For a non-alcoholic version, you can skip the liqueur and add a splash of vanilla extract to the coffee.
Nutritional benefits: Tiramisu contains protein-rich ingredients, such as eggs and mascarpone, but it is also a source of carbohydrates from the biscuits. However, consumption of this dessert should be moderate, considering its caloric content.
Frequently asked questions:
- Can I use raw eggs? It is advisable to use fresh, high-quality eggs. You can also opt for pasteurized eggs if that is a concern.
- How can I make vegan tiramisu? You can replace the mascarpone with a mix of silken tofu and coconut milk, and the biscuits can be replaced with vegan options.
- How long does it keep in the refrigerator? Tiramisu keeps well in the refrigerator for 2-3 days, but it is most delicious after being chilled for at least 8 hours.
Now that you have all the necessary information, it's time to get to work! Tiramisu is a dessert that not only delights the taste buds but also brings a smile to the faces of those who enjoy it. So, enjoy every moment spent in the kitchen and don't forget to share it with your loved ones! Bon appétit!
