Ingredients:

For the dough:
- 500 g flour
- 250 ml warm milk
- 100 g melted butter
- 1 packet (7 g) dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 eggs

For the filling:
- 300 g telemea cheese or well-drained cottage cheese
- 1 egg (for brushing the croissants)
- 100 g grated cheese (optional, for extra flavor)

Preparing the yeast:

1. In a small bowl, mix the yeast with 1 teaspoon of sugar and 50 ml of warm milk. Let the mixture sit for 10 minutes until it becomes frothy. This step is essential to activate the yeast, ensuring that the dough will rise beautifully.

2. In a large bowl, combine the flour with the salt. Make a well in the center and add the yeast mixture, the rest of the warm milk, and the melted butter. Add the eggs and mix well with a spatula or by hand until you obtain a homogeneous dough.

3. Knead the dough for 5-7 minutes on a lightly floured surface until it becomes elastic and smooth. It is important not to add too much flour, as we want fluffy croissants.

4. Place the dough in a bowl greased with a little oil, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until it doubles in volume.

5. Meanwhile, prepare the filling. In a bowl, mix the telemea cheese or cottage cheese with the grated cheese (if using), and if desired, you can add some herbs like dill or parsley for a more intense flavor.

Shaping the croissants:

6. After the dough has risen, turn it out onto a work surface and divide it into 12 equal pieces. Roll each piece into a thin circle about 20 cm in diameter.

7. Cut each circle into 8 triangles. Place a tablespoon of the cheese filling at the base of each triangle and roll it tightly towards the tip, forming croissants.
