Chicken and Pea Meatballs

To prepare these delicious chicken and pea meatballs, we start by preparing the necessary ingredients. The first step is to finely chop the onion, preferably a little finer, so that it sautés evenly and incorporates well into the final mixture. In a pan, we add a few tablespoons of oil and let it heat over medium heat. Once the oil is hot, we add the chopped onion and sauté it, stirring occasionally, until it becomes transparent and starts to caramelize slightly. This process will give a special flavor to the dish.

After the onion has sautéed properly, we add the peas, which can be fresh or frozen, depending on preferences. We season the mixture with salt and pepper, then cover the pan with a lid and let it cook for about 20 minutes, stirring occasionally and adding warm water if necessary to prevent sticking. The peas should be tender but not turn into puree.

Meanwhile, we take care of the chicken breast. We slice the meat into thin pieces so that it cooks quickly and evenly. We heat a grill or a non-stick pan and, when it is well heated, we add the slices of chicken breast. We cook them for about two minutes on each side until they become golden and well done. Once ready, we let them cool slightly, then chop and grind them using a food processor until we obtain a homogeneous mixture.

We transfer this chicken mixture to a large bowl and add the finely chopped fresh parsley, grated Parmesan cheese, and the egg. We mix everything well so that the ingredients integrate perfectly. Finally, we add the sautéed peas and mix again. It is important to adjust the taste with salt and pepper according to preference.

Once the mixture is homogeneous, we form the meatballs with wet hands to prevent sticking. We first dip them in beaten egg, then in breadcrumbs, to obtain a crispy crust when frying. In a pan, we put plenty of oil and let it heat well. When the oil is ready, we add the meatballs and fry them for 3-4 minutes on each side until they become golden and crispy.

Once they are ready, we take them out onto a plate lined with paper towels to absorb the excess oil. These chicken and pea meatballs can be served hot, alongside a fresh salad or as an appetizer at a festive meal, being a delicious and healthy choice!

 Ingredients: For 10 people: 500 g chicken breast, 200 g peas, 2 eggs, parsley, salt, pepper, onion, parmesan. For breading: 2 eggs, breadcrumbs. For frying: oil.
