We start this delicious recipe by preparing all the necessary ingredients to ensure we enjoy a pleasant culinary experience. The first step is to clean and wash the onion. It is chopped into small cubes, making sure the size is uniform for even cooking. Garlic, an essential ingredient for adding intense flavor, is peeled, washed, and finely chopped so that its aroma is fully released during cooking.

We continue with cherry tomatoes, which are not only delicious but also very visually appealing. They are washed well and chopped finely; I prefer to cut each tomato into four quarters, then each quarter into two halves, to obtain smaller pieces that are easy to integrate into the dish. Spinach, a nutrient-rich vegetable, is boiled according to the instructions on the package, after which it is well drained to ensure it does not leave liquid in the final composition.

In a frying pan, heat the oil, then add the finely chopped onion and garlic. They are sautéed lightly, during which the delicious aromas are released. When the onion becomes translucent and the garlic intensifies its aroma, add the cherry tomatoes, stirring gently for a few minutes. This is the ideal time to season the mixture with salt and pepper, according to personal preferences.

Once the tomatoes begin to soften, add the prepared spinach, stirring everything with a wooden spoon to achieve a homogeneous mixture. At this point, we can preheat the oven to 175 degrees Celsius to ensure it is ready to receive our dish.

The next step is to generously grease the interior surface of the ramekin dishes with a little butter to prevent sticking. The prepared mixture is divided into four equal portions, each portion placed in a ramekin, leveling it with the help of a spoon. With a teaspoon, create a small hollow in the center of each portion, where we will add an egg. This will add a creamy texture and rich flavor to the dish.

For an extra touch of flavor, sprinkle grated cheese on top, choosing your preferred type. The ramekin dishes are placed in the preheated oven on the middle rack and left to bake at medium-low heat. It is important to check on them periodically to ensure the surface becomes golden and appetizing, and the egg white coagulates to our liking. Once ready, they can be served warm, enjoying a nourishing and flavorful meal, perfect for any occasion.

 Ingredients: - 250 g spinach (I used frozen chopped spinach - the weight is measured after the spinach has been boiled and well drained) - 25 cherry tomatoes (the recipe in the book mentions 5 tomatoes - I replaced them with 25 cherry tomatoes) - 1 medium-sized white onion - 2 medium-sized garlic cloves (the author of the recipe uses a single garlic clove) - 4 tablespoons of olive oil - 4 medium-sized eggs - 3 tablespoons of grated cheese (I used finely grated Grana Padano) - finely ground sea salt - a mix of white, green, and black pepper - butter for greasing the ramekin dishes
