Whether you are celebrating an anniversary, a professional achievement, or simply want to indulge yourself, this simple and delicious recipe is the perfect solution.

Preparation time: 30 minutes
Baking time: 30-35 minutes
Total time: 1 hour
Number of servings: 12

Necessary Ingredients

For the Base
- 8 eggs
- 9 tablespoons of sugar
- 7 tablespoons of flour
- 2 tablespoons of cocoa
- 3-4 tablespoons of oil
- 1 vial of rum essence
- 1 packet of baking powder
- A pinch of salt

For the Syrup
- 5 tablespoons of sugar
- 1 1/2 cups of cold water

For the Chocolate Cream
- 300 ml of liquid cream
- 300 g of milk chocolate
- 200 g of butter at room temperature
- 1 vial of rum essence

For Decoration
- Liquid cream (whipped) with 2-3 tablespoons of cocoa and a little cold milk added

Step by Step

1. Preparing the Base
Start by preheating the oven to 180°C. In a large bowl, separate the egg whites from the yolks. Add a pinch of salt to the egg whites and beat them until soft peaks form. Gradually add the sugar, continuing to mix until you achieve a firm and glossy meringue.

In another bowl, combine the yolks with the oil and cocoa. Mix well, then gently fold this mixture into the meringue. Use a spatula to carefully mix, ensuring you do not lose the air from the egg whites.

Add the flour mixed with baking powder and fold the mixture until you obtain a uniform batter. Pour the mixture into a 26 cm diameter cake pan lined with parchment paper. Bake the base for 30-35 minutes, or until it passes the toothpick test (the toothpick should come out clean).

2. Preparing the Syrup
In a pan, melt the 5 tablespoons of sugar until golden. Carefully add 1 1/2 cups of cold water and let it simmer for a few minutes until the sugar completely dissolves. Turn off the heat and let the syrup cool.

3. Preparing the Chocolate Cream
In a bowl, whip the liquid cream until firm. In another pot, melt the milk chocolate in a bain-marie or microwave, being careful not to burn it. Once melted, let it cool slightly, then add it to the whipped cream along with the room temperature butter and rum essence. Mix well until you obtain a smooth and homogeneous cream.

4. Assembling the Cake
Once the base has completely cooled, cut it into three equal layers. Soak each layer with the prepared syrup.

Assemble the cake as follows:
- First soaked layer
- 1/2 of the chocolate cream
- Second soaked layer
- Remaining cream
- Third soaked layer

Cover the cake with whipped cream mixed with cocoa and decorate as desired with grated chocolate, berries, or almond flakes.

Suggestions and Variations
This chocolate cake can easily be adapted according to personal preferences. You can add chopped nuts or hazelnuts to the batter for an extra crunch or replace the chocolate with a white variant for a pleasant contrast.

Another delicious suggestion is to serve the cake alongside a caramel sauce or with vanilla ice cream, which will add a note of freshness and further highlight the chocolate flavor.

Nutritional Benefits
Although the chocolate cake is not a diet dessert, its ingredients do provide some nutritional benefits. Milk chocolate contains antioxidants, and butter is a good source of healthy fats. When consumed in moderation, this cake can be a welcome indulgence in a balanced diet.

Frequently Asked Questions
Can I use dark chocolate instead of milk chocolate?
Of course! Dark chocolate will provide a more intense and less sweet flavor, ideal for chocolate lovers.

How can I keep the cake fresh?
I recommend storing it in the refrigerator, covered with plastic wrap, to prevent it from drying out. It will stay fresh for 3-4 days.

Is this cake suitable for vegans?
For a vegan version, you can replace the eggs with a substitute (such as banana puree or soy yogurt) and use vegan butter.

The chocolate cake is more than just a dessert – it is an experience that combines intense flavors and fine textures.
