It is essential to sauté the scallions for a few minutes, stirring constantly to ensure even cooking. This step helps release the flavors, and the scallions will begin to turn translucent. After you finish sautéing, cover the skillet with a lid and reduce the heat to low. Let the scallions steam for about 10-15 minutes until they become soft and tender. It is important to check occasionally, stirring gently to prevent sticking to the bottom of the pan.
Once the scallions have softened, uncover the skillet and increase the heat to medium. Continue to sauté the scallions, stirring carefully to ensure they brown evenly on all sides. This process will add a note of caramelization that will intensify the flavors. When the scallions turn golden, it's time to add the white wine. Use a quality wine, as its flavor will reflect in the dish.
Increase the heat to high and let the wine boil, allowing the liquid to reduce by half. At this stage, the natural sugar in the wine will begin to caramelize, adding a sweet taste to the scallions. Stir carefully to ensure even distribution of flavor. Once you achieve a pleasant consistency, remove the skillet from the heat.
