Tochitura: a traditional Romanian delight, perfect for festive meals or a comforting family dinner. This simple and tasty recipe will bring you joy in every bite. Ingredients:
- 500 g pork (ideally use meat from the shoulder or neck for a rich and juicy flavor)
- 3 smoked sausages (homemade sausages are preferred for an authentic taste)
- 1 jar (400 g) mushrooms (fresh mushrooms are an excellent choice, but canned ones are just as good)
- 1 small can (400 g) tomatoes in juice (use quality tomatoes for a more flavorful sauce)
- 2 tablespoons tomato paste
- 1 bunch of fresh parsley (for garnish and an extra touch of flavor)
- Salt and pepper, to taste
- Oil for frying
- 100 ml water

Preparation:
1. Start by washing the pork well under cold running water. Then, cut it into cubes of about 2-3 cm. This will help with even browning and quick cooking.

2. In a deep pot, heat two tablespoons of oil over medium heat. Add the pork cubes and fry them until golden brown on all sides, about 10-15 minutes. It is important not to overcrowd the pot so that the meat browns evenly. If necessary, fry in batches.

3. Once the meat is browned, add the sliced sausages. Let them fry for a few minutes to release their flavors.

4. Add the drained mushrooms (if using canned mushrooms) or sliced fresh mushrooms. Mix well and let them cook together for 5 minutes.

5. Pour in the tomatoes in juice and the two tablespoons of tomato paste. Mix everything well and add 100 ml of water. Let it simmer on low heat, covered, for about 20-25 minutes. During this time, the meat will become tender, and the flavors will blend perfectly.

6. Taste and season with salt and pepper to your liking. Finally, add the chopped fresh parsley, mixing to release its aroma.

Serving suggestions:
Tochitura is served hot, alongside steaming polenta and sheep cheese. A fresh summer salad with tomatoes and cucumbers will perfectly complement this savory dish.

Possible variations:
For a spicier version, you can add fresh chili peppers or chili flakes. You can also experiment with other types of meat, such as beef or lamb, for a different flavor.
