Ingredients needed

- 700 g boneless turkey breast
- 5-6 potatoes (approximately 600 g)
- Half a small cabbage (400 - 500 g)
- 2 bell peppers (preferably one red for a vibrant look)
- 2-3 small onions
- 2-3 cloves of garlic
- A glass of milk (approximately 250 ml)
- 100 g feta cheese
- 1 tablespoon flour
- 200 ml water or clear vegetable/chicken broth
- 8-10 tablespoons olive oil
- 1 teaspoon marjoram
- 1 teaspoon oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika (hot or sweet, to taste)
- 1 teaspoon dried rosemary
- Salt and pepper to taste

Step by step for a perfect Gyros

1. Preparing the meat: Rinse the turkey breast well under cold running water. Pat it dry with a paper towel and cut it into small pieces. Place the turkey pieces in a bag or a deep bowl.

2. Marinating the meat: In a small bowl, mix the spices (marjoram, oregano, cumin, paprika, rosemary, salt, and pepper) with 4 tablespoons of olive oil. Pour this marinade over the turkey pieces and mix well, ensuring each piece is evenly coated. Cover the bowl and refrigerate for 2-3 hours (ideally overnight to intensify the flavors).

3. Preparing the vegetables: During this time, you can prepare the vegetables. Slice the potatoes into thin rounds, shred the cabbage as for a salad, and cut the peppers into strips. Finely chop the onion and garlic.

4. Sautéing the vegetables: In a frying pan or wok, heat a tablespoon of olive oil and add the onion and garlic. Sauté for 1-2 minutes until they become translucent. Add the marinated turkey pieces and let them brown slightly until they turn white.

5. Preparing the potatoes: Remove all ingredients from the wok, leaving the sauce. If needed, add a little more oil and sauté the potatoes for a few minutes until they are lightly browned.

6. Assembling the dish: Grease a baking dish with a tablespoon of olive oil. Place the potatoes at the bottom of the dish, followed by the turkey pieces. Sauté the cabbage for a few minutes, just until it softens a bit, and place it over the meat. Then add the strips of peppers.

7. Preparing the sauce: In the wok, add another tablespoon of oil, add the flour, and mix well. Quickly deglaze with the milk and chicken broth, stirring constantly until you achieve a smooth mixture. Let it simmer for 5 minutes until the sauce thickens. Season with salt and pepper, then pour the sauce over the vegetable and meat mixture in the dish.

8. Baking: Preheat the oven to 200 degrees Celsius. Cover the dish with aluminum foil and bake for 35-40 minutes. About 15 minutes before it's done, remove the foil and sprinkle the diced feta cheese on top.

9. Serving: Once the dish is ready, take it out of the oven and let it cool for a few minutes. Serve it warm, alongside a fresh salad or a portion of pita bread.

Useful tips

- For a more flavorful marinade: You can add lemon juice or balsamic vinegar to the marinade. These will help the meat become more tender.
- Variations: If you prefer, you can replace the turkey breast with chicken thighs or even tofu for a vegetarian option.
- Side dishes: This oven gyros pairs perfectly with a Greek salad or tzatziki sauce.
- Storage: You can keep leftovers in the fridge, in an airtight container, for up to 3 days.
