Preparation time: 15 minutes
Cooking time: 30 minutes
Total time: 45 minutes
Servings: 4-6

Solyanka is a rich and hearty soup, full of diverse flavors and textures that has won hearts over time. This recipe is a combination of flavorful ingredients that brings a touch of warmth and comfort on chilly days. Its origins are lost in the mists of history, but it is known to have originally been a filling dish for those in need of energy, often made with leftover meats and vegetables. Solyanka is an excellent choice for a comforting lunch or dinner, as well as for a gathering with friends.

Ingredients:
- 150-200 g beef ham, smoked sausages, smoked chicken breast, smoked meat, and bologna (all cut into julienne)
- 3-4 liters of meat broth
- 3-4 pickled cucumbers (grated, not in vinegar)
- 1 large onion (finely chopped)
- 1/2 lemon (sliced)
- 100 g green olives (sliced)
- 2-3 tablespoons tomato paste
- Salt, pepper, fresh parsley (chopped), and sour cream (for serving)

Preparing Solyanka – Step by Step:

1. Preparing the ingredients: Start by preparing all the ingredients. Cut the meat into thin strips (julienne), the onion into small cubes, and the olives into slices. The pickled cucumbers can be quickly grated to easily incorporate them into the soup.

2. Sautéing the meat: In a large pot, add a few tablespoons of oil and heat it over medium heat. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent. Then, add all the types of meat prepared earlier and fry them for about 10 minutes, stirring constantly to prevent sticking. This is when the flavors will combine and begin to intensify.

3. Adding tomato paste and cucumbers: After the meat is sautéed, add the tomato paste and the pickled cucumbers. Mix well and let it cook for 3 minutes. This step will add a note of acidity and sweetness to the soup.

4. Boiling the broth: Add the meat broth, brought to a boil, and then reduce the heat. Let it simmer for 10 minutes. This is when all the ingredients blend perfectly, and the aroma will fill the entire room.

5. Finalizing the dish: After 10 minutes, add the lemon slices and olives. These add a fresh note and a slightly salty taste to the soup. Let it simmer for another 3 minutes. Finally, season with salt and pepper to taste and add the chopped fresh parsley.

6. Serving: Turn off the heat and let the soup rest for a few minutes before serving. You can add a tablespoon of sour cream to each bowl for an extra creaminess and flavor.

Useful tips:
- Choosing the meat: Use a diverse combination of meats to achieve a rich flavor. Don’t hesitate to experiment with different types of smoked meats, each bringing a unique character.
- Pickled cucumbers: Make sure to choose pickled cucumbers in brine, not vinegar, for a more balanced taste.
- Variations: You can try adding vegetables like carrots or celery to further enrich the soup. Additionally, the vegan version can include mushrooms or tofu.

Delicious pairings:
Solyanka pairs perfectly with fresh, crusty bread or toasted bread croutons. A craft beer or a dry white wine would be excellent accompaniments.

Nutritional information:
A serving of Solyanka contains approximately 350-450 calories, depending on the types of meat used. It is rich in protein and provides a good source of healthy fats. Additionally, lemon and parsley bring vitamins and antioxidants, contributing to a balanced menu.
