- 1 liter water + 1 tablespoon coarse salt
- 0.5 liter vinegar
- 6 bay leaves
- 1 tablespoon black peppercorns
- 1 tablespoon mustard seeds
- 100 ml olive oil or vegetable oil (optional, for a more intense flavor)

Preparing the marinated gudgeon:

1. Cleaning the gudgeon: Start by scaling the gudgeon. Use a sharp knife to remove the scales, being careful not to damage the delicate flesh. Then, cut off the head and remove the tail fin. It is essential to work carefully, as the gudgeon is a fragile fish.
