In a world where appetizers can turn any meal into a feast, stuffed eggs with tuna paste in tomato sauce stand out for their intense flavor and elegant presentation. These stuffed eggs are not only delicious but also easy to prepare, making them the perfect choice for any occasion, from festive meals to casual family gatherings. Inspired by traditional recipes but with a modern twist, this recipe is dedicated especially to my friend Gabytza, on the occasion of a birthday. Let's get started!

Necessary ingredients:

For the stuffed eggs:
- 4 eggs
- 1 can of tuna in oil (about 200g)
- 2 tablespoons of grated cheese
- 1 boiled egg yolk
- 1 tablespoon of cream cheese
- 1 tablespoon of capers
- juice from half a lemon
- finely chopped fresh dill
- salt and pepper to taste

For the tomato sauce:
- 3-4 ripe tomatoes
- 1 medium onion
- 2 cloves of garlic
- butter the size of a walnut
- 1 bay leaf
- salt and pepper to taste

Preparation steps:

1. Boiling the eggs:
Start by placing the eggs in cold water. Bringing the water to a boil may take a few minutes, but I recommend boiling them for 10-12 minutes to get hard-boiled eggs. After boiling, transfer the eggs to cold water to stop the cooking process. This will also make peeling them easier.

2. Peeling the eggs:
Once cooled, carefully peel the eggshells to avoid damaging them. Cut each egg in half lengthwise and gently scoop out the yolks with a spoon.

3. Preparing the tuna paste:
In a bowl, add the tuna (with the oil), the boiled yolk, grated cheese, cream cheese, and chopped fresh dill. Mix all the ingredients using a hand mixer until you achieve a homogeneous mixture. Then, add the lemon juice and capers, seasoning with salt and pepper. Use a fork to mix, being careful not to crush the capers. This will add a pleasant texture and a salty note to the paste.

4. Filling the eggs:
Use a spoon or a piping bag to fill each half of the egg with the tuna paste. Sprinkle grated cheese on top of each stuffed egg to give it a delicious touch and an attractive appearance.

5. Preparing the tomato sauce:
In a frying pan, melt the butter over medium heat and add the finely chopped onion and thinly sliced garlic. Sauté them until they become translucent and aromatic. Peel the tomatoes (you can use a quick blanching method to easily peel them) and puree them in a blender. Add the tomato puree to the pan, along with the bay leaf, salt, and pepper. Let the sauce simmer for about 10 minutes, stirring occasionally, so it thickens slightly.

6. Assembling and baking:
Preheat the oven to 180°C. Pour the tomato sauce into a ceramic dish, then carefully place the stuffed eggs on top. Put the dish in the oven and bake for 10-15 minutes, until the cheese on top browns nicely.

7. Serving:
After baking, remove the dish from the oven and sprinkle fresh parsley on top for an extra touch of color and flavor. Serve the stuffed eggs warm, as an appetizer, alongside a fresh salad or with slices of toasted bread.

Useful tips:

- Experimenting with other ingredients: You can experiment with different types of fish for the filling, such as salmon or sardines. Additionally, adding olives or roasted peppers to the paste can bring an even more complex flavor.
- Tomato sauce: If you want a spicier sauce, you can add a pinch of chili pepper or a little chili sauce.
- Egg care: If you have difficulty peeling hard-boiled eggs, try using eggs that are not very fresh; they peel more easily.

Nutritional values:
A serving of this appetizer contains approximately 250-300 calories, depending on the ingredients used. Eggs are an excellent source of protein and vitamins, while tuna provides heart-healthy omega-3 fatty acids. The tomato sauce is rich in lycopene, a powerful antioxidant.

Frequently asked questions:

1. Can I use quail eggs? Yes, you can use quail eggs for a more elegant version; the boiling time will be shorter (about 5-7 minutes).
2. How can I store the stuffed eggs? If you don’t consume them immediately, you can store the stuffed eggs in the refrigerator for up to 2 days in an airtight container.
3. What drinks pair well? This appetizer pairs excellently with a dry white wine or an aperitif cocktail, such as a spritz.

In conclusion, stuffed eggs with tuna paste in tomato sauce represent a delicious and elegant choice for any meal. Whether you prepare them for a special occasion or for a family dinner, they are sure to impress with their refined taste.
