To prepare a delicious dish of cabbage with smoked ribs, start by carefully choosing the ingredients. You will need a fresh cabbage, preferably fermented for a more intense flavor, well-smoked pork ribs, onion, olive oil, dry white wine, and water. Make sure all ingredients are at room temperature before starting the cooking process.
In a large pot, lay a first layer of cabbage, cut into thicker strips or large pieces, so as to form a consistent base. This layer will absorb the flavors and provide a stable support for the rest of the ingredients. Then add the pieces of ribs, which should be cut into medium-sized portions for even cooking. On top of the ribs, place a whole, peeled onion, which will add sweetness and flavor to the dish.
Continue to build layers by adding another row of cabbage, followed by another portion of ribs, and then again an onion. This layering process will create a rich blend of flavors, and each bite will be an explosion of tastes. Finish with a final layer of cabbage, which will cover all the ingredients below.
Once you have completed the layers, pour the olive oil evenly over the cabbage, making sure it is well distributed. Let it simmer for about an hour and a half, making sure to check from time to time, to ensure that the ingredients do not stick to the bottom of the pot and that the liquid has not reduced too much.
After the cooking time has elapsed, remove the lid and let the aroma reveal itself.
