Gelatin is placed in a saucepan with compote juice and steamed (once it starts to boil, remove it from heat). The eggs are separated. The yolks are mixed with sugar, starch, vanilla, grated lemon and orange peel, and milk. The mixture is brought to a boil and stirred continuously until it thickens and has the consistency of sour cream. When the cream is cooked, let it cool slightly, add the gelatin, then the whipped egg whites, mix well and place in the refrigerator. Stir occasionally to prevent it from thickening too much, just to cool down. I also added half of the remaining peaches, which I blended into a puree, while the other half I cut into smaller pieces. A smaller tray is covered with cling film, moistened on the outside. Thinly sliced fruits are placed at the bottom of the tray. Whip the cream (you can also add a stabilizer) and gently mix it with the cold cream, being careful not to harden it. A portion of the cream is placed over the diced peaches, followed by the rest of the cream. Cover with a layer of ladyfingers, which I briefly soaked in compote. Cover with cling film and refrigerate overnight. I didn't decorate it as it looks nice as it is. Enjoy your meal!!!
