Chicken liver is a delicacy that, if prepared correctly, can become a true culinary gem. In this recipe, we will transform a simple yet nutrient-rich ingredient into a delicious and creamy pâté, perfect for serving on a slice of fresh bread or as an appetizer. We start by thoroughly washing the liver, ensuring that we remove any impurities. We let the liver sit in cold water for about 30 minutes to enhance its texture and flavor. After soaking, we carefully clean the membranes, as they can affect the final consistency of the dish. Once cleaned, we wash it again to ensure it is completely clean.

In a large pot, we place the liver along with a peeled onion cut in half, a peeled garlic clove, salt, a few peppercorns, and a few bay leaves. We cover the ingredients with water and put them on the heat. It is important to carefully monitor the boiling process; when foam forms, we remove it with a spatula to obtain a clear broth. We let it boil for 30 minutes, during which the liver will develop its flavors.

After the liver has boiled, we drain it and rinse it under a stream of warm water. We let the liver cool completely, and this step is essential for achieving a smooth texture when we blend the ingredients. Once the liver has cooled, we place it in a food processor, adding the boiled onion, soft butter, egg yolks passed through a fine grater, salt and pepper to taste, mustard, and a pinch of thyme. We blend until we obtain a smooth and creamy paste, which will be the base of our pâté.

In the end, we will have about 550 grams of pâté, which we transfer to a container. To extend its shelf life, it is recommended to divide the pâté into several small containers and pour a thin layer of olive oil or melted butter on top. This will help form a protective film, preventing oxidation and keeping the pâté fresh for longer. Now, all that’s left is to let it cool in the refrigerator for a few hours.
