Ingredients
For the cake:
- 6 fresh eggs
- 5 tablespoons of sugar
- 2 tablespoons (heaping) of flour
- 7 tablespoons of ground walnuts
- A pinch of baking powder
- A pinch of salt
For the buttercream:
- 200 g of butter (80% fat), at room temperature
- 4 tablespoons of powdered sugar
- Seeds from half a vanilla pod
- 3 teaspoons of cocoa
- 1 teaspoon of ground coffee
For the syrup:
- 500 ml of water
- 4 tablespoons of sugar
- 1 teaspoon of orange zest in a jar (ideally from candied peel)
For decoration:
- 200 ml of liquid cream
- White chocolate roses (or other chocolate decorations)
- A few squares of milk chocolate
- Colored fondant for sugar flowers
Preparing the Cake
Step 1: Preparing the sugar flowers
Start by creating the flowers from the fondant. Choose various colors to give the cake a festive look. This step can take about an hour, so make sure you have enough time. Once done, place the flowers in the fridge to harden.
Step 2: Preparing the cake layers
1. Separating the eggs: In a large bowl, separate the egg whites from the yolks. It is essential that the bowl in which you beat the egg whites is clean and dry.
2. Beating the egg whites: Add a pinch of salt to the egg whites and start beating them with a mixer. Continue until you achieve a firm foam.
3. Adding the sugar: While the mixer is running, gradually add the sugar, continuing to beat until you obtain a glossy and stiff foam.
4. Incorporating the yolks: Add the yolks, baking powder, flour, and ground walnuts, gently folding with a spatula to avoid losing air from the egg whites.
5. Baking: Pour the mixture into a round baking pan lined with parchment paper. Bake in a preheated oven at 180°C for 30-35 minutes. The cake is ready when it passes the toothpick test – if it comes out clean, it’s perfect.
Step 3: Preparing the syrup
In a pot, combine water, sugar, and orange zest. Boil over medium heat for about 5 minutes, stirring occasionally, until the sugar is completely dissolved. Allow the syrup to cool.
Step 4: Preparing the buttercream
1. Mixing the ingredients: In a bowl, beat the butter at room temperature with the powdered sugar. Add the vanilla seeds, cocoa, and ground coffee. Continue mixing until you achieve a smooth and fluffy cream.
2. Filling the cake: Cut the cake into two parts, ensuring the base is thicker than the top. Soak the bottom layer well, then add a generous layer of buttercream. Reserve a spoonful of cream for decorating the flowers.
Step 5: Decorating the cake
1. Whipping the cream: In another bowl, whip the liquid cream until it becomes firm, but be careful not to over-whip it.
2. Covering the cake: Spread a uniform layer of whipped cream over the cake. Use the remaining cream to decorate the sugar flowers and arrange them on the cake. You can add white chocolate roses and squares of milk chocolate for an extra touch of elegance.
Serving Suggestions
This delicious cake can be served alongside a cup of freshly brewed coffee or aromatic tea. A scoop of vanilla ice cream would add a pleasant contrast to the soft texture of the cake. If you want to impress even more, you can prepare a caramel or chocolate sauce to drizzle on top.
Tips and Variations
1. Adding nuts: You can experiment with different types of nuts (almonds, hazelnuts) in the batter for a different flavor.
2. Flavored syrup: Instead of orange zest, you can use coffee or vanilla syrup for an extra kick of flavor.
3. Decoration: The sugar flowers can be made in various colors or shapes, adapting them to the holiday theme.
