Preparation Time: 30 minutes
Cooking Time: 1 hour and 15 minutes
Total Time: 1 hour and 45 minutes
Servings: 4

Recipe History:
This recipe combines tradition with innovation, inspired by culinary techniques used over time to achieve tender and flavorful meat, accompanied by side dishes that provide a pleasant contrast of textures and flavors. Oven-baked chicken is a classic dish, but with the addition of chestnuts and cocktail cherries, it becomes a feast that impresses with simplicity and refinement.

Ingredients:
- 1 chicken (or a grill chicken, preferably Cornish for a more tender texture)
- 1 sweet potato
- 10 edible chestnuts
- 1 small jar of pitted cocktail cherries
- 5 tablespoons of extra virgin olive oil
- 2 tablespoons of mustard
- 1 tablespoon of honey
- 4 tablespoons of breadcrumbs
- Salt and pepper, to taste
- Herbs (thyme, chives, bay leaves, garlic, tarragon) or 1 packet of Kotani Provence chicken seasoning
- 1 cube of butter
- 250 g of Bonduelle green bean pods
- 1 large white onion
- 1 clove of garlic

Step by Step:
1. Preparing the chicken:
Start by boiling the chicken in a large pot of water and salt. This step is essential to achieve tender and juicy meat. Let the chicken boil for about 30-40 minutes. After boiling, remove it from the water and let it cool.

2. Preparing the herbs:
While the chicken is boiling, prepare a mixture of herbs. You can use fresh or dried herbs. If you opt for a fine chop, mix the herbs with a little olive oil or melted butter. Then, massage the mixture over the entire surface of the chicken. This "massage" will help infuse the meat with delicious flavors.

3. Preparing the vegetables and sides:
In a baking tray, place the chicken in the center. Around it, add the boiled chestnuts (some peeled, others not), the cocktail cherries, thickly sliced onion rings, a whole clove of garlic, and pieces of sweet potato cut into various shapes (triangles, squares, quarters). These sides not only add color but also a mix of textures and flavors.

4. Baking:
Preheat the oven to 200°C. Place the tray in the oven and bake the chicken for 30-40 minutes until it turns golden and crispy. After 20 minutes, use a spoon to drizzle the sauce from the tray over the chicken, ensuring it absorbs the delicious juices.

5. Preparing the green beans:
In a pot of boiling water, steam the green bean pods for 5-7 minutes. Once cooked, drain them and toss them in flour, melted butter, salt, white pepper, and breadcrumbs. Place them on a tray lined with baking paper and bake in the oven for 15-20 minutes until crispy.

6. Preparing the onion rings:
Cut the white onion into thick rings and carefully separate them. Dredge them in flour, honey, and breadcrumbs, then bake on a tray lined with baking paper, just like the green beans, until golden and crispy.

7. Serving:
Serve the whole chicken on a platter, alongside the crispy green bean sides, roasted chestnuts, cocktail cherries, and crispy onion rings. The sweet potato can be served on a separate plate or alongside the rest of the dish.

Practical Tips:
- Buying the chicken: Choose a quality chicken, preferably one raised traditionally, for superior flavor.
- Finding ingredients: If you can't find edible chestnuts, you can use roasted nuts or hazelnuts.
- Vegetarian option: You can replace the chicken with marinated tofu, adding spices and herbs to create a delicious vegetarian version.

Frequently Asked Questions:
- What is the difference between chicken and broiler? Chicken has more tender and flavorful meat, ideal for oven cooking.
- Can I prepare this dish in advance? Yes, you can boil the chicken and prepare the sides a day ahead, then bake them together on the day of serving.

Nutritional Benefits:
Chicken is an excellent source of lean protein, while sweet potatoes provide healthy carbohydrates and fiber. Chestnuts are rich in vitamins and minerals, and green beans are an excellent choice for vitamins and antioxidants.

This recipe is not just a meal, but a true culinary experience that brings together family and friends. Enjoy every moment and savor the rich and delicious flavors!

 Ingredients: a young chicken (or a grill chicken if you can't find a hen, but the English Cornish hen is better for my recipe, it tenderizes better, has a more reddish color, and less fatty skin, I've seen in the recipes of the lovely Jamie Oliver) 1 sweet potato (used by Americans for mashed potatoes at Thanksgiving alongside turkey); 10 edible chestnuts; 1 small jar of pitted cocktail cherries; 5 tablespoons of cold-pressed extra virgin olive oil; 2 tablespoons of mustard; 1 tablespoon of honey; 4 tablespoons of breadcrumbs; salt, pepper; herbs (thyme, chives, bay leaves, garlic, tarragon) or 1 packet of Provence chicken seasoning by Kotayni; a cube of butter; green beans from Bonduelle; 1 large white onion; 1 clove of garlic;
