Nettles are a treasure of nature, full of vitamins and minerals, and this nettle meatball recipe will transform an often underestimated ingredient into a tasty and nutritious dish. Perfect as an appetizer or as a main course alongside a fresh salad, these meatballs are not only healthy but also extremely flavorful.
Ingredients:
- 500 g fresh nettles
- 4 medium onions
- 1 teaspoon butter
- 2-3 tablespoons flour (you can also use whole wheat flour for a healthier option)
- 2 slices of bread (preferably homemade) soaked in milk
- 4 eggs
- Salt and pepper, to taste
- Oil for frying
Preparation:
1. Start by washing the nettles under a stream of cold water to remove impurities. It is important to wear gloves when handling nettles to avoid stings.
2. Boil the nettles in salted water for about 5-7 minutes until they become tender but not fully cooked. Drain them from the cooking water and let them drain well, then chop them finely.
3. In a pan, melt the butter over medium heat and add the finely chopped onion. Sauté the onion for 5-7 minutes until it becomes transparent and slightly golden. This step will add a special flavor to your meatballs.
4. In a large bowl, combine the chopped nettles, sautéed onion, flour, soaked bread slices (remove excess milk before adding), eggs, salt, and pepper. Mix well until you obtain a homogeneous mixture. If you feel adventurous, you can also add chopped fresh herbs like dill or parsley for an extra flavor boost.
5. Let the mixture rest for 10-15 minutes. This step will help the meatballs hold their shape during frying.
6. Heat oil in a deep pan over medium heat. Form meatballs from the mixture, being careful not to make them too large for even cooking. Fry them on each side for 3-4 minutes until they become golden and crispy.
7. Remove the meatballs onto a paper towel to absorb excess oil.
Serving:
These nettle meatballs are delicious both warm and cold. You can serve them with a garlic yogurt sauce or a fresh tomato and cucumber salad. An interesting alternative would be to pair them with spicy sauces or even a melted cheese sauce for a more decadent taste.
Variations:
To give your meatballs an exotic touch, you can add spices like cumin or smoked paprika. Additionally, instead of nettles, you can use spinach or other greens, adapting the recipe according to the season and preferences.
Practical tips:
- Make sure the nettles are fresh and vibrant; avoid yellowed or dried ones.
- You can prepare the meatballs and freeze them, so you have a quick appetizer on hand during busy days.
Treat your taste buds with these savory and healthy nettle meatballs that will surely impress anyone who tries them!
