Baked Meatballs
Ingredients: -2 potatoes -2-3 carrots -4-5 cloves of garlic, crushed -1 onion, finely chopped -500 g minced meat -2 eggs -1 tablespoon breadcrumbs -1 bunch of fresh parsley, finely chopped -salt -pepper, freshly ground
To prepare these delicious potato and carrot meatballs, start by peeling the potatoes and carrots. Choose medium-sized potatoes that are fresh and starchy, while the carrots should be juicy and vibrant in color. After peeling the vegetables, grate the potatoes using a small grater to obtain fine strips. These will combine better with the other ingredients. The carrots, on the other hand, grated on a large grater, will add a pleasant texture and a hint of sweetness to the mixture.
After grating the potatoes, it is essential to squeeze them well to remove excess water. This will help the meatballs to be more compact and not fall apart during baking. In a large bowl, mix the grated potatoes with the carrots, adding the crushed garlic, finely chopped onion, minced meat (you can use pork, beef, or chicken, depending on your preferences), beaten eggs, breadcrumbs, and finely chopped parsley. Season the mixture with salt and pepper to taste, ensuring that all ingredients are well incorporated.
Once you have obtained a homogeneous mixture, wet your hands with a little water and take a tablespoon of the meat and vegetable mixture. Form small balls that you can gently flatten to obtain a meatball shape. Place them on a baking tray lined with parchment paper, making sure to leave a little space between them so they bake evenly.
