To prepare these delicious cookies, we start by mixing the eggs with a tablespoon of water in a large bowl. It is important to ensure that the eggs are well beaten to achieve a smooth texture. Once we have a homogeneous mixture, we add the sugar, vanilla essence, and grated lemon zest, which will provide a special fragrance and flavor to our preparation. Using the mixer on medium speed, we continue to mix the composition until the sugar is completely dissolved and the mixture becomes a little creamier.

While the mixer is running, we gradually add the oil, continuing to mix to incorporate it well into the composition. This step is essential, as the oil will help achieve a soft and fluffy texture. After the oil is fully integrated, we begin to add the flour mixed with baking powder and the three tablespoons of coconut. It is important to sift the flour before adding it to avoid lumps and to achieve a fine dough.

The resulting dough will have a consistency that is neither liquid nor too hard, having a texture that can sit on a spoon without spilling. With lightly oiled hands, we form balls from the dough of about 3 cm in diameter. We place these balls on a baking tray lined with parchment paper, leaving enough space between them, as the cookies will rise during baking.

We preheat the oven to 180 degrees Celsius and bake the cookies for 10-12 minutes, or until they become golden and slightly browned on the bottom. It is recommended to watch them closely in the last minutes of baking to ensure they do not burn. After removing them from the oven, we let them cool on a rack.

To decorate them, we melt the chocolate in a double boiler or in the microwave, being careful not to burn it. Once melted, we can use a teaspoon or a piping bag to decorate the cookies. These are not only a visual delight but also a treat for the taste buds. The cookies are delicious and can be stored for up to 5-6 days, and the longer they sit, the tastier they become, as the flavors intensify.
