Are you looking for a simple and quick recipe for an appetizer that will impress all your loved ones? The vegetable tart is the perfect choice! With a crispy crust and flavorful filling, this is a versatile recipe that you can adapt to your preferences. Let’s see together how we can achieve a perfect result!
Ingredients for the dough:
- 250 g flour
- 100 g margarine (or butter for a richer taste)
- 1 teaspoon baking soda
- 1 teaspoon vinegar
- 200 ml warm water
- A pinch of salt
Ingredients for the filling:
- 1 leek
- 1 zucchini (preferably young, for a milder taste)
- 300 g fresh mushrooms (champignon or any preferred variety)
- 1 bell pepper (red or green for vibrant color)
- 1 cup tomato sauce (can be homemade)
- Delikat (or other preferred seasoning)
- Thyme (fresh or dried)
- Oil for greasing the pan
Step 1: Preparing the dough
Start by cutting the margarine into small cubes. In a large bowl, combine the flour with the baking soda and a pinch of salt. Add the margarine pieces and rub them with your fingers until you achieve a mixture similar to breadcrumbs. This step is essential for obtaining a flaky crust.
In another container, mix the warm water with the vinegar. Gradually add this liquid to the flour and margarine mixture, kneading until you obtain a homogeneous dough. Cover the bowl with a cloth and let it rise for an hour in a warm place. This step will help develop the texture.
Step 2: Preparing the filling
Meanwhile, prepare the filling. Wash and clean the vegetables. Slice the leek into thin rounds, chop the zucchini and bell pepper into cubes, and slice the mushrooms. In a pan, add a little oil and sauté the leek for a few minutes until it becomes slightly soft. Then, add the mushrooms, zucchini, and bell pepper. Let the vegetables sweat over medium heat for about 10 minutes.
Add the tomato sauce and a pinch of Delikat, mixing well. Let the mixture simmer on low heat for a few minutes until the vegetables are cooked but still crunchy. You can adjust the seasoning to taste by adding more Delikat or other preferred spices.
Step 3: Assembling the tart
Preheat the oven to 180°C (350°F). Divide the dough into two parts: a larger part for the tart base and a smaller part for the lattice. Roll out the larger dough on a floured surface to obtain a thin sheet. Place the sheet in a greased pan, ensuring the edges are raised.
Spread the vegetable mixture in the pan, leveling it out. Roll out the remaining dough and cut it into strips about 1 cm wide. Arrange these strips over the vegetables, forming a lattice pattern. Sprinkle a little thyme on top for added flavor.
Step 4: Baking
Place the pan in the preheated oven and bake the tart for 45 minutes, or until the crust is golden and crispy. The aroma that will spread in the kitchen will make you eagerly await this delight.
Step 5: Serving
The vegetable tart can be served hot or cold. It is perfect for a light dinner, as well as for parties or gatherings with friends. It can be accompanied by a fresh salad or a yogurt sauce with dill.
Personal suggestion: If you want to enhance the flavor of the tart, you can add green or black olives to the filling, which will provide a delicious contrast.
This vegetable tart is not only a simple recipe but also an excellent way to integrate vegetables into your diet, offering you a healthy and tasty meal. Try it and enjoy every delicious slice!
