Onion Stew with Pork
The onion is carefully peeled, setting aside the skins that do not belong in our dish, and sliced thinly to release its savory aromas. The bell pepper is cleaned of its stem, and the seeds are removed to avoid disturbing the final texture of the dish. It is cut into thin strips, preparing to add a sweet and crunchy note to the recipe. The carefully chosen pork is diced into appropriately sized cubes, ensuring it cooks evenly and absorbs all the flavors from the pot.
In a spacious pot, the oil is poured in and heated over medium heat. Once the oil is hot, the chopped onion is added, which will begin to saturate the oil with its delicate aroma. After a few minutes, when the onion becomes translucent, the bell pepper is added, and to facilitate the steaming process, a small amount of water, about 50 ml, is added. This step is essential to prevent the vegetables from burning and to allow them to soften well, releasing their flavors.
When the onion and pepper have softened and taken on a soft texture, the pork cubes are added. They need to be mixed well with the vegetables so that the flavors intertwine. Next, enough water is added to cover the meat, and the pot is covered with a lid. It is left to simmer on low heat for about 30-40 minutes, ensuring that the flavor concentrates and the meat becomes tender.
After the meat has cooked and become soft, 2 tablespoons of broth are added, which will enhance the flavor of the dish. It is mixed well to incorporate the broth, and then seasoned with salt and pepper to taste. It is allowed to boil for a few moments to blend the flavors and create a delicious sauce.
Finally, chopped fresh parsley is sprinkled on top, which will give a fresh and vibrant note to the dish. This not only improves the aesthetic appearance but also complements the taste with a herbaceous aroma. The dish is served hot, ideally accompanied by a side of polenta or mashed potatoes, which will absorb the flavorful sauce and turn the meal into a true delicacy.
