- 1 sachet of whipped cream hardener
- 300 ml sweet cream
- Juice of one fresh lemon
- 1 teaspoon grated lemon zest
- 2 sachets vanilla sugar
- 100 g sugar
- A few strawberries for decoration
- Sugar Roses (optional)

Instructions

Step 1: Prepare the pastry
1. Separating the eggs: Start by separating the whites from the yolks. Make sure there is no trace of yolk left in the whites, otherwise they will not beat well.

2. Beat the egg whites: In a large bowl, beat the egg whites with 3 tablespoons of cold water, using an electric mixer. When it starts to foam, gradually add the sugar and continue mixing until stiff and glossy.

3. Incorporating the yolks: Add one egg yolk at a time, mixing carefully after each one. This step is essential to keep the air in the egg whites, which will make the batter fluffy.

4. Sift dry ingredients: In a separate bowl, mix the flour with the starch and baking powder. Sift the mixture over the egg mixture, being careful not to lose the air in the egg whites. Use a spatula to incorporate the ingredients, stirring gently.

4. Whip the cream: In a separate bowl, whip the remaining cream with the whipping cream stiffener and the remaining sugar until stiff. Carefully fold the cream into the cheese mixture using a spatula.

Step 3: Assemble the cake
1. Cut the cake: Once the cake has cooled completely, cut it into 3 equal slices horizontally.

2. Filling the layers: Spread a layer of cream cheese on each slice of pastry, followed by thin slices of strawberries. Continue assembling the cake as follows: top, cream, strawberries, top, cream, strawberries, until all the ingredients are finished.

3. Decorating the cake: At the end, decorate the cake with whipped cream, fresh strawberry slices and, if you wish, add sugar roses for an elegant look.
