Ingredients:
- 100 g dark chocolate
- 100 g milk chocolate
- 1 tablespoon butter
- 150 g nuts
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon grated orange zest
- 1 packet vanilla sugar
- 1 essence of rum

Step 1: Preparing the chocolate
We start by breaking the dark chocolate and milk chocolate into small pieces. We place these pieces in a heat-resistant bowl and put them over a double boiler (a bowl over a pot of boiling water, without letting the bowl touch the water). We also add the tablespoon of butter. We stir constantly until the chocolate and butter melt and combine. Once everything is melted, we let the mixture cool to room temperature.

Step 2: Preparing the dough
In another bowl, we whisk the eggs with the sugar until it completely dissolves and the mixture becomes fluffy and light in color. We gradually add the melted chocolate, mixing with a spatula or wooden spoon to well integrate the ingredients.

Step 3: Adding dry ingredients
We start incorporating the flour, one cup at a time, mixing slowly to avoid lumps. Next, we add the baking powder, vanilla sugar, grated orange zest, and rum essence. All these ingredients will bring a wonderful aroma to our biscotti!

Step 4: Nuts and chilling
We chop the nuts into small pieces (not too fine, to keep the textures) and add them to our mixture. We mix well to ensure the nuts are evenly distributed in the dough. Then, we cover the bowl with plastic wrap and let the mixture chill in the refrigerator for 30-40 minutes. This step is essential to achieve perfectly crunchy biscotti.

Step 5: Shaping and baking the biscotti
After the dough has cooled, we sprinkle a little flour on the work surface. We divide the mixture into three equal portions and form logs about 3 cm wide. We place the logs on a baking tray lined with parchment paper, leaving enough space between them as they will expand while baking. We preheat the oven to 180 degrees Celsius.

We bake the biscotti for 25 minutes until they become slightly golden. After removing them from the oven, we let them cool for a few minutes before slicing. We use a sharp knife to cut the logs into slices about 1-2 cm thick.

Step 6: Second baking
We return the slices to the oven for another 10 minutes so that they become crunchy. In the meantime, we can prepare for serving. The biscotti are arranged on a nice platter and are delicious alongside a cup of coffee, tea, or warm milk.
