1. Preparing the yeast: Start by making a simple yeast mixture. Dissolve 50 g of fresh yeast in a bowl with 100 ml of warm milk and 1 tablespoon of flour. Let it rise in a warm place for about 15-20 minutes, until the mixture doubles in volume.

2. Mixing the ingredients: In a large bowl, sift the flour 2-3 times to improve its texture. Make a well in the center of the flour and add the yeast mixture, the remaining milk, yolks, sugar, lemon and orange zest, and a pinch of salt. Mix with a spatula or your hands until combined.

3. Kneading the dough: Start kneading the dough by gradually adding the melted butter and oil, until the dough becomes elastic and no longer sticks to your hands. Cover it with a clean towel and let it rise in a warm place for about 40-45 minutes.
