Bird's Milk
To prepare a delicious recipe for doughnuts with vanilla sauce, we start by preparing the egg whites. In a clean, dry bowl, beat the egg whites from 4 eggs with an electric mixer on high speed until they become frothy and fluffy. Then, gradually add 100 grams of sugar, continuing to mix until we obtain a stiff, shiny meringue that forms firm peaks when we lift the mixer beaters. It is important that the egg whites are whipped properly, as they will give the doughnuts an airy texture.
In a separate pot, put 500 ml of milk with a vanilla pod or, alternatively, with a few drops of vanilla essence over medium heat. Let it boil, stirring occasionally, until the milk starts to bubble. When the milk is well heated, take a spoonful of the egg white meringue and carefully place it into the boiling milk. It is recommended to do this in batches so that the doughnuts do not clump together and can cook evenly. Each doughnut will cook for about 2 minutes on each side until they become fluffy and lightly golden.
After all the doughnuts are cooked, remove them with a slotted spoon and place them on a plate to drain excess milk. In another bowl, beat the yolks from the same eggs with the remaining 100 grams of sugar and 50 grams of flour, mixing well until we obtain a homogeneous mixture. Over this mixture, carefully add the remaining boiled milk, being careful not to form lumps, and put it back on the heat, stirring continuously. Cook until the sauce thickens and reaches a creamy consistency.
Once the sauce is ready, pour it over the cooked doughnuts, allowing them to absorb the delicious flavors. Let them cool slightly before serving.
