Step by step: Making the cake
Step 1: Preparing the cake

4. Pour the mixture into a springform pan lined with oil and flour or parchment paper. Bake in a preheated oven at 180°C for 30-35 minutes, or until a toothpick comes out clean. Let it cool completely before cutting it into 3 layers.
Step 2: Preparing the cream
1. Over a double boiler, melt the chocolate together with the heavy cream. Stir until it becomes a smooth mixture. Let it cool.
2. In another bowl, beat the margarine with the powdered sugar until creamy. Add the cooled chocolate, one spoonful at a time, and mix well.
Step 3: Preparing the syrup
1. In a saucepan, caramelize 2 tablespoons of sugar, then carefully add a cup of water (watch out for the steam!). Continue adding the remaining sugar and the rum extract. Let it simmer on low heat for 2-3 minutes, then let it cool.
Step 4: Preparing the gelatin
1. Follow the instructions on the package to prepare the gelatin. Make sure it is cool but not fully set.
Step 5: Decorating the cake
1. Whip the heavy cream until it becomes firm. Prepare the gelatin for the cream according to the instructions and carefully fold it into the whipped cream.
2. Shape the ears, mouth, and nose of the lamb from the pink fondant. You can use cocoa powder to darken them if you don't have black fondant.
3. Assemble the cake: Soak the first layer, add more than half of the chocolate cream, follow with the second soaked layer, and pour the red gelatin. Finally, add the last soaked layer.
Step 6: Finishing the cake
1. Cover the cake with a thin layer of whipped cream, then use a piping bag to create swirls on the surface.
