Birthday cake with delicious cream - A heartfelt recipe

When it comes to birthdays, a delicious cake is definitely the star of the table. Today, I will share a special cake recipe that I created with much love for Catalina's birthday. This cake is not only a delight for the taste buds but also a true gem on the festive table. We will have two layers, one larger and one smaller, filled with a rich and delicious cocoa cream, all covered with a flavored milk powder paste. Let's get to work!

Preparation time: 30 minutes
Baking time: 1 hour
Total time: 1 hour and 30 minutes
Number of servings: 12

Ingredients

*Layer 1 (large)*
- 12 eggs
- 12 tablespoons of sugar
- 12 tablespoons of flour

*Layer 2 (small)*
- 6 eggs
- 6 tablespoons of sugar
- 6 tablespoons of flour

*Cream*
- 4 eggs
- 400 g sugar
- 4 tablespoons water
- 100 g cocoa
- 200 g Rama margarine (or another quality margarine)
- 2 rum essences

*Milk powder paste for decoration*
- Honey (preferably acacia)
- Milk powder
- Food coloring (optional, but recommended for a festive look)

Preparation

1. Preparing the layers: Start by separating the egg whites from the yolks. It is important that all your utensils are clean and dry to achieve a fluffy meringue. Whip the egg whites until stiff peaks form. Gradually add the sugar, continuing to mix until the mixture becomes glossy and firm. This is the secret to a successful layer - the air incorporated into the egg whites will make the layer fluffy.

2. Adding the flour: Once the sugar is completely dissolved, add the sifted flour, one tablespoon at a time, gently folding with a spatula to avoid deflating the meringue. Divide the mixture into two cake pans, one larger and one smaller, lined with parchment paper. Bake them in a preheated oven at 180 degrees Celsius for about 1 hour. Check for doneness using a toothpick - if it comes out clean, the layers are ready!

3. Preparing the cream: In a saucepan, add the eggs, sugar, and water, then place everything over a double boiler. Stir constantly until the mixture thickens, resembling sour cream. Add the cocoa and cubed margarine, stirring until completely melted. Let the cream cool to room temperature. Once cooled, incorporate the rum essences, mixing well.

4. Assembling the cake: Cut each layer into three equal parts. On a platter, place the first large layer, spread some cream on it, then continue with the other layers, alternating layers with cream. Finally, cover the cake with a thin layer of cream or butter to help the milk powder paste adhere.

5. Preparing the milk powder paste: In a bowl, mix the honey with the milk powder until you get an elastic mixture. Add food coloring for a festive look. Use this paste to cover the cake and create decorations on top.

6. Decorating: Be creative! You can form flowers, leaves, or anything else you desire with the colored milk powder paste. It's time to let your imagination run wild!

Practical tips
- Make sure all ingredients are at room temperature before starting preparation.
- If you want a more intense flavor, you can add a few drops of vanilla essence to the cream.
- The cake will keep better in the fridge, but it's good to let it sit at room temperature for 30 minutes before serving to restore its fluffy texture.
- You can serve it alongside a scoop of vanilla ice cream or with a fruit sauce, which will add a fresh touch.

Nutritional information
Each serving of cake contains approximately 350-400 calories, depending on the size and ingredients used. This cake provides a good source of energy due to the sugars and fats from the margarine, but when consumed in moderation, it can be part of a balanced diet.

Frequently asked questions
- Can I replace margarine with butter?
Of course! Butter will add a richer flavor, but make sure it is at room temperature to incorporate well into the cream.
- Can I use another type of flour?
For a gluten-free version, you can try almond flour or rice flour, but the textures may vary.
