To prepare these delicious cocoa cookies, the first essential step is to take care of the butter. In a small saucepan, melt the butter together with the oil over low heat, stirring constantly to ensure it doesn't burn. Once the butter has completely melted and the mixture becomes homogeneous, remove the saucepan from heat and let it cool to room temperature. This step is crucial because if the mixture is too hot, it will affect the consistency of the dough.

In a generous bowl, crack the eggs and mix them with the sugar using an electric mixer on medium speed. It is important to achieve a creamy and fluffy composition, which will give the cookies an airy texture. After obtaining this consistency, gradually add the oil and the butter-oil mixture, making sure to homogenize well after each addition. This will ensure an even distribution of fats in the dough.

Once we have obtained a fine emulsion, we will gradually add the flour, which must be sifted beforehand together with the baking powder to avoid lumps. Mix with a spatula or a wooden spoon until the flour is completely incorporated. Next comes the cocoa, which will give an intense flavor and a deep color to our cookies. Don’t forget to add the rum essence, which will add an extra touch of flavor.

After the mixture is well homogenized, cover the bowl with plastic wrap and place it in the refrigerator for at least an hour. This resting time is essential because it helps to firm up the dough, making it easier to form balls.

Once the time has elapsed, we prepare to form the cookies. Lightly wet your hands to prevent the dough from sticking and form balls the size of a walnut. Roll them in powdered sugar, which will create a sweet and appealing crust. Place the balls on a baking tray lined with parchment paper, leaving space between them to allow for expansion during baking.

The oven should be preheated to 170 degrees Celsius. Place the tray in the oven and bake the cookies for 10-15 minutes. It is important to supervise them, as the baking time may vary depending on the oven. Once they have risen and started to crack slightly on the surface, they are ready to be taken out.

After removing them from the oven, let the cookies cool in the tray for a few minutes, then transfer them to a cooling rack. These cocoa cookies are perfect to be served alongside a cup of tea or coffee. Enjoy!
