Sun-dried or oven-dried tomatoes are a savory delicacy that can transform any ordinary dish into a culinary masterpiece. We start with fresh tomatoes, choosing the ripest and most aromatic ones. We cut the tomatoes in half, ensuring they are uniform for even dehydration. We place them on a baking sheet lined with parchment paper, generously sprinkling salt and freshly ground pepper. This simple yet effective seasoning will enhance their sweet and intense flavor.

We heat the oven to a moderate temperature, around 120°C (248°F), and place the tray with the tomatoes inside. It is important to be patient, as the dehydration process takes time. I kept the tomatoes in the oven for about 6 hours, but the time may vary depending on the size and moisture of the tomatoes. When they are ready, the tomatoes should be dried but not completely, having a slightly elastic texture.

After removing them from the oven, we let them cool slightly, then transfer them to a bowl where we have prepared a mixture of balsamic vinegar, peppercorns, cloves, and bay leaves. This marinade will enrich the flavor of the tomatoes, giving them a sophisticated note. We let the tomatoes soak in this mixture for 5 minutes to absorb all the flavors.

After this step, we take the tomatoes out of the marinade and carefully arrange them in a sterilized jar. For an extra touch of flavor, we add a few garlic cloves, sliced or whole, depending on preferences. We fill the jar with extra virgin olive oil, ensuring the tomatoes are completely covered. The oil will not only preserve the tomatoes but will also impart a rich flavor.

The next step is to boil the jar in a water bath for about 30 minutes. This preservation method will seal in the flavors and extend the shelf life of the tomatoes. Once the time is up, we let the jar cool completely. Once cooled, we store the jar in the refrigerator. The dried tomatoes can be used in various dishes: salads, pasta, pizza, or even as appetizers. Their intense flavors will bring a touch of summer to your table whenever you wish to indulge.
