I made this dessert one evening when I was in the mood for something quick, but without baking, and I remembered this combination of cheese with ladyfingers and a splash of white wine. Ingredients

8 ladyfingers
0.5 kg cottage cheese or ricotta
4 tablespoons powdered sugar
2 tablespoons cocoa
1 glass of dry white wine (for soaking the ladyfingers)

Preparation steps

1. Prepare a small bowl, deep enough to achieve a tall dessert.

2. Dip the ladyfingers one by one in the white wine. Don’t leave them too long, just enough to soak without breaking. Lay them at the bottom of the bowl to cover it completely.

3. Put the cheese in a bowl and mash it well with a fork or a blender. Add the powdered sugar and mix. Taste after the first mixing, as it depends a lot on how sweet the cheese is; if you want it sweeter, add more sugar now.

4. Divide the cheese mixture into two equal parts.

5. Take one half and spread it over the ladyfingers in the bowl. Level it out and gently press to make it even.

6. In the other half of the cheese, add the 2 tablespoons of cocoa and mix well. When it’s homogeneous, add it over the white layer, spreading and pressing evenly.

7. Finally, place the remaining ladyfingers on top, also quickly dipped in wine. Press gently to avoid breaking them.

8. Cover the bowl and refrigerate for at least two hours to let everything set.

9. To serve, turn the dessert out onto a platter. Sprinkle cocoa on top and cut into slices.
