- 1 celery, diced
- 1 bell pepper, diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cup of dry white wine
- 2 cups of chicken broth
- 2-3 sprigs of fresh thyme
- Salt and pepper to taste

Instructions:

1. Preparing the meat: Start by cutting the pheasant into smaller pieces for even cooking. Place the meat pieces in a bowl with cold water and add a tablespoon of white wine vinegar. Let them sit for 10 minutes. This step helps remove any unpleasant odors and tenderizes the meat.

2. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until translucent. Then, add the carrots, celery, and bell pepper. Cook the vegetables for 5-7 minutes, stirring frequently, until slightly softened.

3. Add the pheasant: Drain the pheasant pieces and pat them dry with a paper towel. Add the meat to the skillet over the vegetables, browning for 5-6 minutes until nicely colored on all sides.

4. Deglaze: Pour the white wine over the meat and vegetables, stirring well to release the caramelized flavors from the bottom of the skillet. Let it simmer for a few minutes until the alcohol evaporates.

5. Slow cooking: Add the chicken broth along with the thyme sprigs. Season with salt and pepper to taste. Cover the skillet and let it simmer on low heat for 30 minutes, or until the meat becomes tender and juicy.

6. Serving: Once the pheasant is ready, remove the thyme sprigs and serve the stew hot, alongside mashed potatoes or rice. A fresh green salad can perfectly complement this dish.

They give a special flavor to the roasts), 2 bay leaves, paprika, salt, pepper, rosemary, thyme (I only used thyme because I didn't have rosemary).
