This delicious roasted couscous recipe with zucchini and steak is an excellent option for a flavorful and aromatic meal. We start by selecting the couscous, ensuring that there are no damaged grains. Once we have selected the couscous, we place it in a dry, oil-free pan and roast it over medium heat. It is important to constantly stir the couscous to prevent burning and ensure even roasting. After a few minutes, we will notice how the couscous changes color, turning golden with brownish hues, releasing a pleasant and inviting aroma.

Meanwhile, we dedicate ourselves to preparing the chicken soup. We pour the soup into another pot and heat it on the stove, ensuring that it comes close to boiling point. Once the couscous is roasted, we take it off the heat and add grated lemon zest, stirring well to infuse the flavors. We set the couscous aside until the soup boils.
