Bolle (Aromatic Liqueur Made from Fresh Fruits)
Ingredients: Fruits in season, juicy ones only sugar as vodka or alcohol is required
As seasonal fruits appear, it is time to prepare for a delicacy that will delight the senses: fruits in alcohol. This preparation is not only a method of preservation but also a way to savor the flavors of fruits throughout the year. The first step is to choose the healthiest and ripest fruits, carefully washing them to remove impurities. It is important to remove the stems from the fruits and ensure that small ones, like strawberries and raspberries, remain whole, while larger fruits, such as peaches and apricots, are sliced and pitted.
Once the fruits are prepared, we turn our attention to the large jar, ideally 4 liters, where we will place a layer of fruits about two fingers thick. This will be covered with a layer of granulated sugar about 1.5 cm thick. The sugar will help extract the juices from the fruits, and the flavors will combine over time. After adding the sugar, it is time to pour in the food alcohol or vodka, making sure to completely cover the fruits. This process will be repeated as seasonal fruits appear, starting with strawberries, followed by raspberries, cherries, ripe apricots, very ripe peaches, currants, blueberries, sour cherries, and grapes.
Each layer of added fruits will be followed by a new layer of sugar and a little alcohol, so that over time, the sugar will dissolve, and the fruits will soak up delicious flavors, creating a sweet and aromatic liqueur. Although the process may seem lengthy, it is worth the effort, and the final result is a true explosion of flavors.
After a few years of waiting, I fondly remember those jars forgotten on the pantry shelves. When I decided to open them, the aroma that emerged was simply electrifying. The fruits, now soaked in alcohol, created an extraordinary liqueur, perfect for savoring on cold evenings. It is served in tall wine glasses, where we add a few fruits and pour a little liqueur on top. The fruits are eaten with a spoon, and the liqueur is enjoyed with delight. This drink pairs perfectly with crackers or nuts, making it ideal for a gathering among friends. It is truly a feminine drink that brings joy and good cheer.
